Citrus Teriyaki salmon
Citrus Teriyaki Salmon
Ingredients:
1 lb salmon fillet, skin on
¼ cup honey
¼ cup soy sauce, low sodium
2 TBL orange juice, freshly squeezed
½ tsp orange zest (about 1/2 orange)
1 orange, sliced into 1/4” rounds
2-3 strawberries cut in half
3-4 rosemary sprigs, 2-3” in length
¼ tsp Kosher salt
¼ tsp Freshly ground black pepper
NOTE: Recipe can be multiplied for larger quantities
Directions:
Preheat oven to 375°F convection, or 400°F non-convection.
In a smaller liquid measuring cup, measure the soy sauce, honey, and orange juice. Add the orange zest and emulsify mixture with fork or small whisk until ingredients are well combined.
Place a piece of parchment paper on a baking sheet that has edges. Lay salmon on the parchment paper, skin side down. Pour sauce all over the top of the salmon. Sprinkle salmon with salt and pepper.
Arrange sliced fruit and rosemary on top of salmon.
Bake for 25-30 minutes, depending on size and thickness of your meat.
Serve with your favorite rice and roasted vegetables
