LISA BOYD’S SALMON WITH GARLIC CONFIT

Garlic Confit

(Make ahead. The longer the garlic sits in the oil, the more flavorful the oil becomes.)

Ingredients:

1 head garlic, cloves removed, smashed & peeled

2 cup olive oil (or more if you want flavor infused olive oil to enjoy later)

1 sprig washed and dried rosemary

 

Directions:

1-    Place ingredients in small pot over very low heat until small bubbles begin to form throughout the bottom of the pot. (4-10 minutes. Careful not to burn garlic.)

2-    Immediately remove from heat and let garlic continue to cook in the warm olive oil until cooled. The longer they sit, the more flavorful the oil will become.

3-    Store in sealed jar, making sure the garlic is covered in the oil to preserve.

 

Salmon with Garlic Confit

Ingredients:

1 lb fresh salmon

4 large cloves of Garlic Confit

2 TBL fresh thyme leaves

1 tsp lemon zest

1 TBL garlic infused olive oil

1 tsp lemon juice

1/4 tsp Kosher salt

1/8 tsp freshly ground black pepper

 

Directions:

1-    Preheat oven to 375°F.

2-    Place salmon, skin-side, down a on baking sheet with lip that is lined with parchment paper.

3-    Sprinkle salt and pepper on salmon.

4-    Place garlic cloves, thyme, and lemon zest on cutting board. Chop all together until a paste begins to form.

5-    Move garlic, thyme, and zest to small bowl. Add olive oil and lemon juice. Mash with the back of a spoon and mix to combine.

6-    Spread on top of salmon.

7-    Bake at 375°F for 20-25 minutes until center of salmon is almost cooked through.

8. Garnish with lemon slices and thyme leaves if desired. Enjoy!

 

NOTE: Flavor infused olive oil is best used in salad dressings or when roasting and browning vegetables and meats, etc. Anytime you use olive oil, use this flavor infused olive oil instead to enhance the flavor of your dishes. I cannot wait to hear how much you love it!
