Santa Maria Tri-Tip Recipe

Barbecue season is upon us! Isn’t it a wonderful feeling, especially since this year we are able to celebrate with family and friends?

This delicious Santa Maria Tri-Tip will be the perfect dish to serve. Its savory rub has the perfect amount of sweetness and heat. It is sure to be a hit! Pair this delicious meat with home-made mashed potatoes and barbecued vegetables, and you have the perfect backyard BBQ menu to celebrate with your family and friends! Happy Summer!!

INGREDIENTS:

2-3lb Tri-Tip Steak

MARINADE RUB:

2 TBL Paprika

2 tsp Chili powder

1 TBL Cumin

1/4 cup dark brown sugar

Granulated sugar

1 tsp Garlic powder

1 tsp Onion powder

1 TBL Kosher salt

1 tsp freshly ground black pepper

½-1 tsp Cayenne pepper (optional for additional heat)

TOOLS: Barbecuing is made incredibly easy and fool-proof with a food thermometer. Choose one that has a wired probe or one that is Wi-Fi capable to monitor from your phone.

DIRECTIONS:

1- Make the rub and store in container until you are ready to use.

2- Cover your tri-tip roast with rub and store sealed in the refrigerator for at least 3 hours.

3- When ready to cook, leave seasoned tri-tip at room temperature for 30-60 minutes.

4- COOK: Preheat your grill to high. Sear both sides of the roast on high heat for 10 minutes each. Turn the grill temperature down to low and slowly cook the roast until internal temperature reaches your desired doneness. (medium-rare: 120°F-125°F, medium: 130°F-135°F, medium-well: 140°F-145°F)

5- Let the meat rest covered in tin foil for 10-15 minutes after you are done cooking. This will allow the juices to re-absorb and the meat to finish cooking.

6- SLICE: Tri-tip roasts are best cut against the natural grain of the meat, and at an angle. Use a sharp knife to carefully saw back and forth

7- SERVE: Once the meat is sliced and plated, pour all of the juice from your cutting board right on top of the meat. This adds even more flavor to an already intensely flavorful dish!

NOTE: You can even season your meat upon arrival home from the grocery store. Place seasoned meat in a sealed bag and store in the freezer until you are ready to use. Talk about making dinner easy!
